recipes

k, here's a few things i've made and recommend.

creamy bacon tomato and avocado pasta salad   DELISH.  on a spring/summer afternoon this is an edible heaven.  and my honey was fully impressed too which is pretty awesome because it's hard to get a full endorsement from him.  i made the full amount of the recipe thinking there would be lots leftover.  there was none.  we completely cleaned it out.  the only downside of this dish was that i kept craving it for days after it was gone.

i made a bundt cake!  once again, i'll have to post about that experience later but in the mean time i'll just say it was very similar to this recipe except mine didn't have sour cream.  it was actually from my favorite cookbook, easy weeknight favorites.  and i have my sister eliza to thank for the recommendation because it's one of the few recipes in the book without a picture and honestly, i almost never make anything not accompanied by a pretty picture.

i found this chicken crock pot recipe on pinterest.  it's from a weight watchers food blog but it got great reviews so i thought it would be delicious.  well, it wasn't until after the fact that i realized, "ohhhh of course these people think it's delicious!  they eat weight watchers 7 point recipes all the time!"  i had served it over rice and it wasn't a hit with us but i had tons of leftovers so i got creative.  well, i started putting it in enchiladas instead of regular shredded chicken and it is fabulous!  sooo, i make a big batch of it and then freeze it in labeled sandwich size ziploc bags.  if a mexican style recipe needs shredded chicken it only takes two minutes to defrost in the microwave.  anyways... i highly recommend it.  but don't try eating it plain with rice... you won't like it.

and here is the latest enchilada recipe i made... it was tasty.  and of course i used my fiesta shredded crock pot chicken.  easy to throw together and makes plenty of leftovers!

i'll flatter myself and say maybe there's a recipe or two i'm forgetting (probably not) but really this is all i can think of right now.
